Villa Maria, Chinchiná: The Sugarcane E.A. process retains exceptional flavour whilst extracting around 97% of the caffeine. The beans are steamed with water from the Navido el Ruis to increase porosity before being submerged in Ethyl Acetate collected from fermented sugarcane. A final steam then removes any residual E.A.
