Shakiso, Oromia (Guji): An area favoured by high altitude, heavy rainfall, fertile soil and second to none local knowledge. Shade-grown, ripe cherries are careful sorted & dried in the sun on raised African beds for approximately 12 - 15 days. They are raked and turned periodically during the day except when covered between 12pm and 3pm to protect them from sun damage and at night time to protect it from rainfall and moisture. Careful selection and attention to detail brings exceptional quality and unique flavour.
Did you know? The local area receives on average 2000mm of rainfall a year with only 3 months of the year considered dry.
